SALMON, MARINATED AND PAN SEARED, OVEN FINISHED WITH CORNBREAD & SUMMER SLAW

PACIFIC NORTHWEST WILD KING SALMON, light remoulade sauce, cornbread and summer slaw with a dash of blackberry ketchup, too

As seen in our AUGUST 2014 SHOW, the  SALMON is simply marinated in tamari (or soy) and brown sugar for a short 70 minutes, followed by seasoning with Bob’s trinity of seasalt, pepper and coriander. It is then pan-seared quickly and finished in the oven; served with REMOULADE, (and/or BLACKBERRY KETCHUP) our favorite CORNBREAD recipe (tweaked but inspired by Cook’s Illustrated) and our SUMMER SLAW with cashews.
