FIGS, ROASTED with or without CHEESE

Ingredients:

  • 4 fresh figs

    1/2 cup grated Manchego cheese

    EVOO to drizzle

Method:

Wash figs, cut into quarters. Place on cookie sheet, drizzle with EVOO, and roast for 15-20 minutes in 350ºF oven. Remove and cool slightly before adding cheese. Garnish with crumbled cheese. Serve warm.

Alternative for whole figs: Before warming, stuff whole fig with a cheese or nuts or combination, then wrap in a thin piece of prosciutto. Place in oven 1o minutes.  Serve immediately.
