SALAD, CHERRY TOMATO BREAD (Blond Croutons)

Ingredients:

  • 1pint cherry tomatoes, halved
  • 2 tablespoons red wine vinegar
  • sea salt, healthy pinch, with fresh ground coriander, and fresh ground black pepper
  • 1 4" stem of Greet Oregano, leaves removed and crumbled between fingers and added to salad
  • 1-2 tablespoons Italian flat leave parsley, small chop, dry
  • 2 Tablespoons crumbled feta cheese (we use Israeli sheeps milk feta)
  • 3 Tablespoons EVOO
  • 1 cup croutons

Method:

Combine tomatoes, vinegar, spices, and seasoning in medium bowl. Toss to coat. Add EVOO and Feta cheese. Just before serving add the croutons.
